Tarte Tatin...

Hi,

today will be something else, rather something not from polish kitchen. Generally I try to convince everybody, that Poland have the best kitchen around the world, but....
...I'm studying french philology, so french tastes are also close for me.

A couple of years I've tried for the first time my TARTE TATIN... I loved it.
If you interested in culinary, you know this cake certainly. Apples, carmel, butter, cinnamon...outrageously delicious!


My tart never looks perfect, so if you do this first time, don't worry! Next will be better. Remember, taste is the most important. :)

Ingredients:

6 apples (I use ''boskop'' ones)
pie crust dough prepared earlier
100g butter
250g sugar
1/8 teaspoon salt


I'm serving with vanilla ice cream. :)

Beetroot salade

Beetroot salade

This week I want to add one recip I use very often in case: I don't have much time or I don't have any other idea what I want to do for diner. This is very fast dish and I love all colors included. Whip up me ang give me full energy.
I go to any shop, I buy beets, mint, spinach and feta cheese. I slice into quarters alle the components except spinach. I serve with olive oil and differents herbes. Done! It's delicious every time and never get bored.


On the margin, beetroot is a vegetable low in fat, full of vitamins and minerals and packed with powerful antioxidants! It's so underestimated in my opinion...

Chocolate...

Today, I must confess that sometimes like everyone I have these days when I have a craving for something, but I don't really know for what exactly. Swede and swede to find sth and finally... I make a decision. Chocolate! The dark one! But that's not the end. I prepare my favorite chocolate cake. It’s full of chocolate pieces and sweet dark cherries.

300g flour
50 g unsweetened cocoa powder
1/4 teasp. baking soda
1  teasp baking powder
250g sugar
100g butter,  (room temperature)
1 egg
1 teasp vanilla
3 teasp milk
150 g chocolate pieces
300g  sweet dark cherries (pitted)

Whisk: flour, soda, baking powder
Beat sugar with butter. Add egg. Add milk. Add flour etc. Mix it all. Finally add cherries and chocolate. Bake 30 minutes/180 C.

Polish gastronomy

If I had to choose my favourite cook, that would be undoubtedly Wojciech Modest Amaro. Why? He's polish and I'm sure that we need to promote our national kitchen. Because it's beatiful and full of surprises. Guarantee!
So, who is he?
Wojciech Modest Amaro is the owner and Executive Chef, Atelier Amaro - Poland’s first Michelin-rated restaurant. Before he has training his skills in famous restaurants around the world such as: El Bulli, Le Meurice or Noma! Lat year as the FIRST in Poland was honored with a star Michelin.
When I saw first time his book, I thought: That's a man! What a boldness! Looking at the picture of beetroot soup which looks like apple cake...It was for me hudge wonderment.

 "Polish Cuisine of the 21st Century" was awarded the Grand Prix de la Literature Gastronomique in Paris. This book changed the image of contemporary Polish cuisine and especially changed MY vision of polish food.
Amaro has shown what is possible when creative cuisine is based on classical and traditional dishes.


To just confirm this constatation, I want to quote some Amaro's sentence given in the interview:
-What are the biggest Polish culinary sins?
-''Do not appreciate what they have''.

And that's for me the essense of Amaro philosophy. I think it's wonderful.



Pumpkin soup

Welcome to my blog! Here I cook and eat generally healthy and rather simple food. I try to use  natural ingredients: whole grains, good fats, fruits and vegetables. 
A subject of kitchen it's not such a novelty. But...I love cooking and just spending time in my kitchen. 
Here I want show some of my recipes which I admire and I come bach to them. 

First I want to add my way to prepare soup of pumpkin. Autumn have started, so it's perfect time to do it. It's very warming dish, ideal for during the late cold evenings.


tablespoon of Oil
1 onion
1 cloves garlic, grated
2 kg of pumpkin, coarsely chopped
1 tablespoon of ginger, chopped or grated
2 potatos
1 litre of vegetable stock
400ml coconut milk
some herbes de Provence, curry and chilli

Fry onion. Add broth and vegetables. Cook all. Mix it. Add coconut milk and herbes. 
It's ready.
